This delicious dish was prepared by our handyman Raoul Sanchez. I’ve named it Super Raoul Stew! An English version of the Valencian classic Arroz Caldoso, this dish contains rice, mixed vegetables, some spinach, thyme and a few other exotic spices from the local market Raoul sourced himself. Add his amazing Love & Soul chicken to this, and you have a mesmerising meal which my friend Enrique Rios and I enjoyed today, for lunch.
